Kitchen Chemistry Course Details
Kitchen Chemistry will have students falling in love with chemistry!
What could be more fun than learning science while conducting labs you can eat? Kitchen Chemistry focuses on core, foundational chemistry topics in an engaging setting, the kitchen! The topics are the same mainstream chemistry topics you would expect in any basic chemistry course. The big difference is that all labs are recipes. In addition, there is a focus on food science as it relates to chemistry and biochemistry.
Kitchen Chemistry starts as any college chemistry class does by covering proper lab technique, except we use cooking tools to do this. Beginning in Week 2, there is an atoms first approach so that students can truly understand what matter is made from. The course content builds from there as students learn about atomic structure, the periodic table, molecules, and chemical reactions.
Are you wondering where this class fits between Blair’s written course R.E.A.L. Science Odyssey Chemistry 1 and her online class Chemistry 2?
This course was developed to be the perfect bridge between the two. It is slightly more rigorous than Chemistry 1 and less rigorous than Chemistry 2. In addition, with the focus on lab work that it primarily conducted in class it would be a great course to take concurrently while doing R.E.A.L. Science Odyssey Chemistry 1.
Class Format
- One chapter a week focused on the weekly topic. See the schedule for that week.
- One lab that focuses on the topical information covered in the reading. These will be started in class, as we cover the chemistry and food science of the lab (recipe). Most weeks students will finish making the food after class.
- The recipes have lab sheets to be filled out after class. These highlight the science principles covered when making the food. Some of these will be started in class.
- Live, online teaching from Blair Lee, M.S. These classes run about 1 hour 15 minutes.
- Blair will teach the material covered in the text.
- Blair will ask and answer questions and have some discussion to help learners understand the topics. This is a great way to assess understanding and to help your learner get the most out of the material.
- Classes include the opportunity for peer interaction as students share their knowledge and recipes.
- We will make the recipe while discussing chemistry and food science.
- We start class each week with learners sharing their finished product if it was completed outside of class. (This is optional.)
This course comes with original materials written by Blair Lee for Kitchen Chemistry.
Each week students will learn about important science concepts that build on previous classes. This is a hands-on science course. You can look for Blair to encourage mastery of the concepts with a hands-on approach to learning both in class and outside of it.
In addition to important topical knowledge, students will:
- Learn the scientific method by using it
- Get experience with the practical and important skill of cooking important basic cooking
- Learn important lab skills while using common kitchen tools
- Gain experience writing reports and recording observations
- Work with 2-dimensional and 3-dimensional scientific models
- Have the option of presenting an original recipe
- Engage with a peer group about this fascinating area of science!
There is a lot of chemistry that can be learned while cooking. This class focuses on important foundational concepts in chemistry using food and cooking to teach them! YUM! Learners will build scientific models and learn important lab techniques as they learn the fascinating science of food.
- The recipes in this class are vegetarian or vegan. No meat is used in any dishes.
- All recipes can easily be adapted to use gluten-free ingredients.
- Some of the dishes in this class include cooking in the oven and on the stove.
Class will meet weekly for 1 hour 15 minutes to discuss and learn about kitchen chemistry. The class is interactive. Student projects turned in will be given specific, individualized feedback.

The Course Structure
- This course comes with original written course materials from Blair Lee, M.S.
- The materials include labs to be conducted outside of class. These are optional to do. They are designed to use materials and ingredients that are easily available. Feedback will be given on all work that is turned in.
- In class, there are hands-on activities to enhance the written text and the class discussion.
- The weekly classes:
- Students will be given time to share any coursework done outside of class.
- Blair gives instruction about the topics covered in the written materials.
- Peppered within this instruction will be Q & A, where learners are given the opportunity to demonstrate their understanding of the topic. This and the in-class activities make the classes highly interactive. The goal is to engage learners and keep them thinking as they work through the information.
Skills Gained
- We will be learning about the important foundational chemistry.
- Students will learn core biology, chemistry, and even some physics in a way that meets many of the Next Gen Science Standards.
- Students will make molecular models to learn the molecules involved in their recipes.
Individual Support
Families and learners are welcome to share any information about their individual learning preferences and needs and instructor will make accommodations that are helpful to the class.

Choose one of their three Fall courses and pair it with one of their three Spring courses. When you do, you will get a refund of $25 for each course. That is $50 total in refunds. You can choose courses from either of the two teachers, or just one teacher for the entire year. To get the refunds, you will need to purchase the second course within 48 hours of the purchase of the first course.
The courses run from 14 to 16 weeks. They meet important Next Gen Science Standards. All course materials are included with the classes.
